So today I decided I wanted something light and summery since the nice weather is upon us in Chico and summerfest is back! I decided to make lemon and rosemary chicken. I found a really quick and easy recipe from Saveur, perfect for doing homework in between.
It really is so simple to make, especially for how wonderfully full of flavor this chicken is. It just doesn’t get easier than this! Just marinate and bake!
This recipe turned out really well and the leftovers are great too.
Definitely worth trying.
Lemon and Rosemary Chicken
Recipe from Saveur
4 pieces of chicken
1/4 cup extra-virgin olive oil
1/4 cup fresh rosemary leaves
1/8 cup fresh lemon juice
5 cloves garlic, thinly sliced
1/2 lemon, peel removed, pith and pulp chopped
Salt and pepper
1. Toss chicken with oil, rosemary, lemon juice, garlic, lemon, and salt and pepper in a bowl or ziploc bag. Marinate for 1 hour.
2. Heat oven to 375°. Arrange chicken in a 9″ x 13″ baking dish; add remaining marinade. Roast, flipping once, until cooked through, 30–40 minutes.
